Your request only removes the transfer tax amount from the face of the recorded document. This means that someone cannot see the tax amount if they pull up the document.

However, the paid transfer tax amount goes into the Recorder's computer system. External companies that purchase data, or anyone that walks into the Recorder's Office, can request the fees paid for the document. They have legal access to the transfer tax amount. Guessing Realist has figured out a way to buy fee data from the Recorder and is calculating price paid from the transfer tax amount (which is what they would do on a regular recording anyway).

I doubt they are calling up the Recorder and asking for the information, they are getting separate fee data and merging it with the recorded document data.
