Not as rare as one might think. Other than a substitution of trustee being recorded, it shouldn't affect the foreclosure one iota. However the foreclosure could be delayed as the new servicer processes the foreclosure into its system. Delays are almost inevitable when changing servicers. How long? Best guess: A few weeks. Depends on many administrative factors to include how efficient the new servicer is & how much their workload increased.
